My father once made a crock of kimchee. He was so proud! He used to open the crock, stored in the basement, to sneak a taste, and I swear we could smell the stuff all the way on the top floor. Cabbage usually has a unique attitude, but kimchee is cabbage with a chainsaw!!!

I have noticed a particular brand of supermarket hot kimchee where the jar lids are almost always swollen. I bought a jar once, not noticing this detail until it started hissing when I opened it. When it finally flew open, then contents were easily double the volume of the jar. I didn't have the heart (or stomach) to try it. If somebody did, though...
