For the second night of Passover, I made latkes from frozen hasbrown mix instead of grating and then squeezing out the excess water from the shredded potatoes. I like baking them instead of frying them because you don't have to deal with hot oil that spits and a house that smells of oil for days. This makes about 18 latkes.

If you like your latkes with a little bit of oil, you can grease the pan.

Baked Latkes from Frozen Hashbrown Mix



Ingredients:

1 bag (30oz) frozen hasbrown mix (shredded potatoes)

1 onion (shredded or grated) or a 10oz bag of frozen chopped onions

2 eggs

salt, pepper

1/4 cup matzo meal or 1/4 cup flour

nonstick cooking spray or parchment paper

Directions:

  1. Preheat oven to 425°F.

  2. Microwave frozen ingredients to thaw (or leave in fridge over night).

  3. Mix all ingredients in a large bowl.

  4. Add salt and pepper to taste.

  5. Spray two baking sheets or cover with parchment paper.

  6. Add latke mixture by 1/4 cup; flatten.

  7. Bake 15 minutes; turn latkes; and bake 10 minutes longer.

  8. Serve with applesauce or sour cream.

See, I might just have to do this if I'm ever called to make latkes. Luckily, I usually get assigned a dessert.
