Frozen Baked Latkes
For the second night of Passover, I made latkes from frozen hasbrown mix instead of grating and then squeezing out the excess water from the shredded potatoes. I like baking them instead of frying them because you don't have to deal with hot oil that spits and a house that smells of oil for days. This makes about 18 latkes.
If you like your latkes with a little bit of oil, you can grease the pan.
